125gButter until light and
  Creamy
  Blend in:
150gSugar
1 Egg
1 Tsp(**) cinnamon
50gGround haselnut
  Lemon zest (to taste)
275gFlour
1tsBaking powder

Mix well and roll out (very thin). Cut into shapes with cookie cutters (or Spekulatius form, if you find one...).

Place cookies on greased cookie sheet and bake at moderate temperature (try 350F, maybe less) until light brown and crisp.

These cookies should be very thin, crisp, and evenly browned.

**the cookbook actually says "kaffeeloeffel", which is really "coffeespoon" not "teaspoon", but my dictionaries don't distinquish. i am not positive, but i think this is a smaller smaller unit than a US teaspoon. i've never worried about it, cuz i like alot of cinnamon)
